Paneer Methi Mushroom bhurji


Paneer methi mushroom bhurji! A no-brainer recipe. This is my go to recipe when I am short of ideas for a meal. I can have this anytime of the day and it comes together in under 15 mins. Totally my kinda meal. Paneer is a versatile cheese that goes with almost anything. The methi gives you the green kick you need for the day. Add cheese for a yummy gooey bhurji.

Ingredients:

Paneer/Indian cottage cheese - crumbled or grated -  100gms
Button mushroms - chopped - 100gms
Fresh methi leaves - a small bunch (you can use any greens of your choice.)
Ginger garlic paste - 1/2 tsp
Turmeric powder - 1/4 tsp
Salt and chilli powder - according to your taste (you can skip chilli powder and add chopped green chillies instead)
Cheese slice - 1(about 20gms)

Method:

Chop the mushrooms into medium sized chunks. The mushrooms will let out water and shrink. so, bigger chunks are fine too. Heat a kadai on the stove and add the chopped mushrooms. Add a bit of salt to help the mushrooms release the water.


Stir the mushrooms till the water dries up. Add the ginger garlic paste and stir till the raw smell of the paste goes. A minute or so. Add the spice powders and salt if needed and add the methi leaves to the kadai. Give it a quick stir and let the leaves wilt a bit for about half a minute.


Now, add the crumbled paneer to this. I don't grate paneer as its a soft cheese. I just crumble it over the kadai. Mix it all up for about a minute or two as paneer cooks fast and you don't want the methi leaves to die a sorry death.


Tear a cheese slice and add it to the kadai and give it a good mix. you can switch off the flame and let the cheese melt a bit.


Plate it all up and enjoy your protein packed meal. This serves as a single meal for me cos Josie doesn't share proteins. lol. You will understand if you are on keto. ;-)
